Some depends on the gym and how the coach structures things. If the gym is lifting oriented you could have goals for max weight in squat, clean, snatch, deadlift, bench, overhead squat, etc. If the gym isn't lifting oriented you could set goals for gymnastic movements (handstand pushups, pull ups, muscle ups, etc) or you could set goals for benchmark workouts (fastest time or most reps for a specific workout).
