True. I just don't hear people say, "This place is the most authentic
Italian [or Chinese] restaurant around" and then it turns out to be just like all the others. Nobody seems to worry about authenticity with Italian restaurants or Chinese Restaurants. I have been to an authentic Chinese restaurant in China Town in Los Angeles. It was absolutely nothing like 99% of Chinese restaurants in the US. Eyeball soup was on the menu. And a number of other things Americans would almost never eat were also choices. Even the noodle and chicken stuff was different.

San Diego/Cali mex is great but it's not true Mexican. Neither is Tex-Mex. Luckily I love all three types

In the US I think you're right. I do prefer Ameri/Cali/Tex ified versions to "authentic" here. Real stuff in Mexico city
