If budget isn't an issue, I'd bump up to a Ryzen 7 3800X or 3800XT.
Everything on your list looks solid to me. I agree with Bert that cable management is better with a full tower, but since you're doing a modular PSU, that will be less of a concern. I think both full towers and mid towers have their place.
I would add at least a 1 TB HDD as a data drive. The NVMe drive will have the OS and your apps, but a data drive is nice for storage of everything else. Also they're pretty inexpensive.

I'd suggest a full ATX tower. The cable management is amazing. I can't believe I stuck to mid-towers forever.
