What you are referencing is more Wing T concept (which both the Run and Shoot and Flexbone the service academies run evolved from)
True Double Wing is foot to foot splits and an attack that is based off the power (aka Toss) off tackle. Though you can add it as a wrinkle, there is no triple option in a true Double Wing offense.
Core plays are
Toss
Wedge/Trap
Counter
Rocket Toss
Sweep
I have run both Wing T and DW in HS, so the iteration of DW I run now has some Wing T concepts like buck sweep, belly and boot pass, as well as some non standard sets, but core DW plays and the tight splits up front. Most true Wing T schemes have the wider splits you describe to entice lines to slant and blitz, which sets up the angle based blocking Wing T teams relay on.
Don Markham is the "godfather" of the DW and the coach mentioned in California whose teams set all types of scoring records and the offense is still very popular there with one of the 2019-2020 CIF State Champions (El Monte) running it. Again, sorry to be that guy, but Double Wing coaches are protective of our offense LOL.
