Went through something similar, a lot of tests over a long period of time that
didn’t show anything. My symptoms were worse than yours. Prilosec or proton pump inhibitors didn’t work. In fact, I think they made it worse because they reduce the amount of acid and the gallbladder is supposed to compensate for that so it actually makes it work more. HIDA scan showed my gallbladder on the low range. Intense stomach pain to include gallbladder location. Went to emergency room and urgent care more than once.

After 4 years of this and everything getting worse I went to yet another gastro doc, this one listened and was straight forward. Not going to do more tests because that is a waste of money. I asked him, can all this be caused by IBS and a sluggish gallbladder. He said absolutely. I decided to mentally accept that.

Now that I have accepted that, the pain still comes and goes, but it isn’t as intense because my mind and anxiety aren’t magnifying it 4xs anymore.

I have cut out chocolate completely and try not to eat red meat because that is a gallbladder trigger. Try to avoid fried foods, some tomato based foods, and anything else I have identified over the years as something that triggers.

Whenever I am having an episode or my gut balance seems off I will do a two times a day treatment of Puritan Pride probiotic pills (2) and Garlique tablets (2). I don’t know if it is true but it seems for me the garlic helps diminish the bad bacteria and the probiotic restores the good.

The reality is you have to identify the foods causing the problem and then avoid them. I hate having to give up chocolate but I hated more the symptoms.
