I will help you for free. Can say that every family vacay has been excellent.
1- Don’t stay in a hotel with littles.
2- Don’t drive a ton. Stay closer to where the activities are.
3- Make a general plan but plan on modifications and changes. We usually plan 2-3 big activities and then have free days so kids can hang with friends or do whatever they want.
4- Plan some alone time with the wife. Go on a walk, Go to dinner, buy her a massage.
5- If your kids are too young, bring an older cousin or something to help with babysitting.
It does get easier as kids get older.

Maybe his wife needs to feel like she has control to avoid unknowns. Some people don't deal well with unknowns.
