The irony is that only high school kids think thick cut is good; stopped liking that crap when I
stopped eating bacon burgers at Carl's Jr.
It isn't good. High end restaurants use pork belly or thin cut bacon. Thick cut bacon is the in-between cut that makes no sense and is either too chewy when lightly cooked, or dry and dense when well done.
I'll put my restaurant going habits here in Chicago up against anyone's. Nobody with any skill uses thick cut bacon.

Hey, I totally get it. Old people with blown out palates love skinny super crunchy hotel buffet bacon.
