250f with apple or cherry is fine - no need for a smoke cabinet. Get the belly
From a butcher, not costco - the fresh pig has much less granular fat. It's all about the brine ( Prague powder, Salt, pepper, light brown sugar, maple syrup, sage, thyme, garlic)

Freeze it after it's cooked and you can cut it thin enough with a good knife.
