You've got a few things wrong
Typically the animals aren't baited. Most reputable outfitters make you do it the old fashioned way by stalking.

Every animal in Africa is carefully managed like the deer, elk, ducks, etc... as we do here. All the herds are culled to a point. The difference is if you send out a park ranger to kill the animals at taxpayer expense or if you let a hunter pay big bucks to do it. Either way the animal is dead. The number of hunting permits released is based on the number of animals that need to be removed to ensure a healthy population.

Carcasses aren't left to rot. They are either used for research or they are donated to the locals to use as they see fit. Yes lion is still eaten in Africa.
