The only thing that matters with sunrise and sunset is that it guarantees that
One didn't finish hiking the trail before the other even started.

This is my final attempt to explain: say on the second day the nun is coming down the mountain. It's 6:55 pm and sun sets in five minutes at 7:00 pm. The day before she had slept in and didn't even start the hike up until 6:55 pm. She's just going to hike all night, instead. Will they ever be at the exact same point on the same trail at the same time, even though they started at completely different times?

Of course. At a little after 6:57, they cross each other on the trail. At that moment when they cross, they are at the exact same point on the exact same trail at the exact same time. 100% guaranteed to cross each other. It has to happen. It can't not happen. And when they look at each other's watches, both watches say it's 6:57 pm.
