Why not?

Part of the school's mission is to provide religious instruction. I don't think the school should go out of it's way to make classes difficult but it is a mistake to think of relious courses at BYU like high school Seminary.

It should just be pass / fail. You have to take them for credit, doesn't impact GPA positively or negatively.
