If you look at my data the death rate is based off population...
not case rates. So the annual flu death rate is .4 per 100,000 population (not case incidents) for the 15-24 age demo

You don't need to know how many actual cases there are to figure out the current death rate per 100,000 for COVID.

Additionally, to your other point, excess death data currently supports the current stated amount of deaths due to COVID-19.
