I actually think that my answer is none of the above and would redo 2001
After thinking about what BYU season was close, but an unfortunate event or events derailed magic, I think I would like a redo on the 2001 football season (not a listed option). I would like a fully health Doman and Staley for the season. That season was magical until the injuries. The injury marred ending was heart wrenching. This would fix several issues, including the following:
1. Luke Staley would have maintained a much better relationship with the program and maybe had a productive NFL career.
2. I think we win out and probably play in a much better bowl game. We may not have played in one of the biggest games, but undefeated we finish the season top 2? top 3? Miami finished the year undefeated, so we probably don't pass them. The Ducks finished with 1 loss and were already ranked ahead of us with 1 loss when we were still undefeated, so we probably finish behind the Ducks. However, we were ranked #9 when we were undefeated and had both Staley and Doman healthy. Most of the teams in the top 10 were behind us when we were undefeated. Tennessee was ahead of us, but lost once more. Maybe Tennessee stays ahead of us and we finish 4 or 5, but undefeated we likely have at least a top 5 finish in football.
3. A 2nd undefeated season would be amazing.
4. This fixes many commenters issue with choosing Davies, because football is more important.
5. I can think of many other points, but these are the most important and relevant

I know there is no guarantee we finish undefeated, just like erasing the CC loss doesn't guarantee an undefeated season. Not having the CC loss/losses without Doman and Staley would likely have changed the bowl game and opponent both seasons, so no way to know...
