Hmm. We only shook on the first day. Put them on the shelf in a cupboard and left them for about 5 months. Just used it
for the first time in the ice cream and it was incredibly strong with a very distinct vodka taste.
So…perhaps not regular shaking is where we went wrong.
The color looked really good though.

I make gallons of vanilla a year. I’ve never made something that burned when using homemade vanilla.

What did we do wrong? I am sure it isn’t supposed to be that strong. We didn’t even finish the ice cream.

Could have been a few things. Poor beans. Not enough beans. Didn’t let them age long enough. Didn’t shake them often.
