You sound like you base this off HS, college, and MLS.
Did you watch the Europa and Champions League games the last few days. Totally goes against your thoughts. No offsides actually congests the game. Sure the middle of the field is open.....no goal there, but the two ends become a joke. They have tried it and it was less fluid with fewer scores.
