My favorite religion classes were taught by someone with a non-BYU PhD in

Biblical Studies (Stephen Robinson). His two NT classes were the perfect mixture of academic and spiritual. This was before his books came out and I sort of lucked out in getting him for the first NT class. I made a point to take the second half from him. I remember being challenged and inspired. The least memorable were the BoM classes taught by some guy whose name and material have long since escaped my memory.

Yes, religion is part of the accrediation at BYU and none of my religion classes were taught "like Seminary"
