Because they are not omniscient.
They become experts by constantly acquiring new information and adjusting based on the new information. There is soooo much we just don't know about just about everything.
Society wants black or white, yes or know answers to things that just can't be answered that way. If an expert gives their best opinion based on current understanding and then is proven wrong, society loses faith in the expert.
