Because they are experts in only part of the equation.

I absolutely trust the epidemiologists on how to handle the spread of the diseas from the medical and public health perspectives.

But, I haven't seen any expert economists in the news or standing at the podium to explain the policies from their perspective. 

I listened to a local Utah medical and public health expert on a townhall call with Congressman Curtis last night. He was spot on with most of his analysis and comments regarding the disease, why it differs from the flu and SARS and how the government orders will affect the public health....

HOWEVER, at one point he stated a perspective that only an economist or financial expert could legitimately make and it really turned me off. He said that the economy would be much worse off if we didn't take more extreme measures and something like 100K Americans were to die from the disease this year. I don't know if he is right or wrong, but he does not have the expertise or experience in the economy or finances to make such a statement - and that statement was absolutely used in an attempt to cause fear to drive compliance with the public health orders.
