Similarly sized home:
Router: ASUS ZenWifi Max (4 of them)
Stuff that connects: ~60 (4K TVs, computers [work and gaming], tablets, lights and a bunch of other IOT stuff, cameras, doorbell)
Pros: Can connect whatever, wherever in the house, on the deck, in the yard without issues. Also dont need to screw around with CAT cabling (house is pre-wired, just dont need it)
Cons: You will replace your wireless routers more than you will update your CAT cabling (the tech just evolves at a different rate and you dont need to really worry about CAT unless you’re maxing out bandwidth)

Wired, wireless, hybrid—it comes down to how much effort and money you want to put into whatever your end goals are. My place is 100% wireless and it works just fine.
