Unique Utah food includes pastrami burgers (try Burgers Supreme on University Parkway) and fry sauce with your fries. Also, "Fresh Mex" which is Costa Vida or Cafe Rio. Those places are good as "fast casual" places, but are not upscale. Benefit though is it's easy to get to the stadium from these places, and you can probably even park in those lots for free and take the UVX fast bus (also free) right to the stadium. Maybe others can confirm the free parking if you eat is still true.
Utah is also unique in its love of gourmet cookies ... try Dirty Dough, Crumbl, Chip, or Crave.
More upscale would be Black Sheep Cafe (gourmet Navajo tacos. Yeah, I know ... but it's really good!). Also, Utah has some of the best Indian food around for some reason ... try Bombay House, Kohinoor, or India Palace. Also good thai places (I think they are all pretty good)
Center Street in Provo has some good options, including Southern (Station 22), Pizza (Fat Daddy's and Mozz), Peruvian (although the better Peruvian is by the University Mall), French bistro, Thai, Chinese, sandwiches, ice cream (Rockwell's is really good), etc. So you could just head there, walk around the historic LDS temple there (you can explore the outside grounds, which are beautiful), and walk historic Center Street if you want.
If you want to have a drink...there aren't as many options, but try Straptank Brewery in Springville, which is right off the freeway.
