I'd be interested in seeing data showing swimming is one of the fastest growing
sports in America.

According to years worth of data from NFHS that appeared to be more Soccer, Lacrosse and Wrestling at least for girls between 1990 and 2009. I believe boys were similar in those sports as well but I trimmed the chart below down to females only for some marketing I was doing at the time. Sure things can change in 7 years but one thing that is certain is women's wrestling is continuing to grow at a rapid pace...

There are many ways to stake a claim to "growth" so the chart measured 3 ways total raw number increase, percent increase and years of growth and then an average of their rankings.

Note that Swimming & Diving for this period had an overall rank of 10th for women and their best category they ranked #7 for total raw number increase. If 10th on the list fits your definition of "one of the fastest growing" then you would be right.
