Yes - it will certainly happen. The problem for most office buildings right now is that they are partly occupied and

it's difficult to do the conversion with office tenants in place. A 1/3rd full building is a nightmare for that building's owners.

I lived in a converted office building for several years. The lobby is amazing. It was so cool to come home to this every night.
