They do recruit, but there are not so many openings that getting a big market

biglaw job like you describe is a cinch. Those firms are planning hires based on summer work, so openings are limited. You can't count on strolling into a great firm, especially in a different market. You would likely be able to find a good job, but not an ideal one, depending on what your idea of ideal is.
