the best time to get the best taste, a burnt end on a brisket, the bark on the pulled pork mixed with the fat, that's great. I don't necessarily like going to a place and ordering a brisket or pulled pork because of that reason. I know the best bites for me are when I'm cutting into it.
The other thing for me is the leftovers - I can use the leftovers for pulled pork and brisket for tacos, nachos, salads, etc., I really like the fact that it will go farther and the taste is still really good.
I do love a ribeye though...just hate paying for how expensive they are right now.
