Because emergency services are an excellent example of "ox in the mire". The
distinction is mentioned to point out that the spirit of the law is more important than the letter. Society needs righteous people to occupy those jobs even on Suday and I believe its even pleasing to God that they do.
Which begs the question- Is it pleasing to God if I do...(incert job occupation) on Sunday? It's very personal but some jobs are obviously okay if the person also seeks to limit their work to what is dutiful. Or in other words avoid it when possible without using it as an excuse to not fulfill you obligations to the Lord.
Pro athletes have to decide for them selves what the concequences are. There are many consequences. Some profitable some not so much.
