No, no we can't say that they are "providing" for their families,
especially not the HS athletes, as an excuse to play/practice on Sunday. That would be like my son arguing that because he wants to be a professional wakeboarder we should go to the lake all day Sunday so that he can practice and "provide for his family." I think you keep hitting the same nail on the head of "providing for the family" as a "get out of the sabbath day free" card. Yes, some people have to work on Sunday, and not just doctors and nurses and policemen. General conference had to have cameramen and producers in order to make it all work. Store managers will need to go in on Sunday frequently. But as a church sponsored school, BYU will do all it can to limit activities on Sunday.

The church's official stance is "Keep the Sabbath Day holy" and have provided a few guidelines for what that means. But in general they leave it up to us to decide how to do that. This leaves a lot of room for interpretation, but I have often found when we try to rationalize commandments, we can usually make changes to do better. It doesn't mean we are sinning or doing something bad, but we can do better.
