Why would I sue Lee Benson for libel?

Nothing in that paragraph is inconsistent with McMahon's story. You're just drawing the wrong conclusions from it.

I'm sure Lee Benson was well aware of McMahon's version of the story and chose to leave it out of his book, which was about BYU's innovation of the passing attack, not about BYU's inconsistent and fairly hypocritical application of the honor code.
