I think you fail to realize just how random the outcomes of sporting events

really are. That's why Vegas puts odds on every game: even a game like Alabama vs. UL-Lafeyette. There is some non-zero chance that any team will lose any game. How "good" you are only improves your chances. It doesn't make them 100%. Utah in 2008 was about as good as BYU in 2006, but they happened to catch a few more breaks than BYU did.
