Not the OP, but I recently did something similar. My breakfast and lunch are the
same every day: a yogurt with a bit of granola for breakfast, cottage cheese with fruit for lunch.

Beef jerky and rice cakes for snacks.

I measure out everything and it’s around 750 calories in total.

So, by the time I get to dinner, I can eat around 1200 and still be in weight loss range. Or even up to 1600 at dinner and stay in maintenance range.
