I think you need to consider this from an evolutionary standpoint: our bodies are excellent reservoirs for carbs
When our ancestors hinted/gathered, they found carbs much less frequently than Karen at the supermarket. As a consequence, our bodies became exceptionally efficient at enterally acquiring, utilizing, and storing carbohydrates. Our problem isn't that carbs are bad for is, it's that we get them in far greater quantities than we are adapted for.
