Here's what I've found on Paul Peterson as an HC, with records, trends, & stats:
Head coach of Snow in 2017 and 2018. The year before he took over in 2016 Snow College went 7-3, scoring 35 ppg and giving up 20 ppg.
2017 they went 10-1. They scored 50 ppg, with 287 rushing yards and 237 passing yards per game, while allowing 27 ppg.
2018 they went 8-3. They scored 50 ppg, with 216 passing yards and 273 rushing yards per game, while allowing 20 ppg.
Since he left Snow is currently 4-2. Overall it looks like Paul Peterson at the very least elevated the scoring of Snow by 15 points while maintaining a similar defense, which led to improved records.
Currently the head coach of Dixie State. The year before he took over in 2018 Dixie State went 7-4. Dixie State averaged 31 ppg on offense with an average of 135 rushing yards and 324 passing yards per game, while giving up 31 ppg.
Currently Dixie State is 5-1, averaging 33 ppg while giving up 18 ppg. Dixie is averaging 152 rushing yards and 288 passing yards ppg.
Overall it looks like Peterson maintained Dixie's scoring while improving their defense by 13 points, which will likely result in an improved record this season compared to last.

He GAed at BYU in 2006 then North Carolina State in 2007. He coached QBs and WRs at SUU starting in 2008, where he coached Brad Sorenson into an NFL draft pick.
