I'm not sure if there are accreditation issues, but no schools allow deferment

without showing you are in some sort of structured program. They do not allow deferment for "working to get papers in to get call that may come". I think you were probably out of luck as soon as fall semester was over. Maybe you could have worked something right before winter semester.
