I have had no trouble getting interviews with my BYU degree. I have encountered great engineers who graduated from many different institutions (Georgia Tech, Virginia Tech, Carnegie Melon, MIT, ...). I have great colleagues that graduated from each one. I have not felt at a disadvantage (Like not at all) because of my BYU degree.
On the flip side I have interviewed SOME grads from those schools that I recommended we did not hire! Just cause you graduated from a great school does NOT mean you're a great engineer. I remember one interview in particular. This person graduated from MIT with stellar grades. On paper they should have been amazing. I got him in my office and he didn't know anything. I don't know how he got those grades. I don't know where he was during class but he knew none of the things I would expect an undergrad to know.
Bottom line, you have options. You could go to those schools and become a great engineer. You could go to BYU and be a great engineer. I strongly believe we get out of our educations what we put into them.
