I didn't find that the professors in my particular major were impressive in any way. Other majors have world renouned staff. It all depends on the major and program.
A little over a decade ago when I was there, BYU apparently had the most competitive entry requirements for the nursing program in the state - but UVSC and Weber seemed to have more qualified graduates. I didn't study nursing, this is what the nursing students would tell me.
People go to BYU for the experience. You can usually get a very similar experience at the other schools but it's still a bit different. To an out-of-stater, even USU, UVU, or the U will seem very religious compared to any college experience outside of Utah.
