Notre Dame is less like BYU than you think
What percent of Notre Dame is Catholic? You might find that 80% engage in some form of service over their years at Notre Dame. Beyond that, only 40% of students polled said Catholic identity was an important part of their decision to go there. Want to guess what those numbers are at BYU? And Notre Dame isn't directly influenced by the Pope on an administrative level.
And finally, to your point, pretty much everyone would bend to Notre Dame because they are Notre Dame. If BYU had the same degree of on-field success and history as Notre Dame does and if they had the same national following, they would already be in the PAC-12, despite their views.
